A Bounty Valentine's
Sunday, February 13, 2011 at 7:10PM Tomorrow is Valentine's Day, and although I'm not planning any special celebration, I decided to make myself a treat - my favourite chocolate bar "RAWy-fied".
The BOUNTY BAR!
It's my first attempt, and as such I wasn't expecting the most amazing results - however, suprisingly enough, it turned out to be so tasty I had to share it with you!
I started by shopping at the Frenchs Forest market today, and got a couple of ingredients to prepare for my mission:
I purchased the most amazing Coconut-Vanilla butter from Cocopure, plus their superb RAW shredded coconut (usually I get the normal TOASTED shredded coconut from my local health food store. This time, however, I wanted to go the extra mile).
When I got back home I used about 2 cups of the shredded coconut as it was, then I quickly whizzed up about one cup into a thin powder using the trusty Magic Bullet (which I got for $10 - you can read about it here).
I mixed them in a bowl, adding 2/3 cups dark agave syrup (it looked pretty dark but the end result was still very light in colour!), 7 tablespoons of that vanilla-coconut butter from Cocopure and about 1/8 teaspoon of Himalayan rock salt.
For that Valentine's atmosphere I put some in heart-shaped molds, and the rest were shaped into finger-sized bars. I let them cool down in the refrigerator while I was making my first-ever attempt at raw chocolate at home (I once made raw chocoalte at Loving Earth's chocolate party, but today was the first time I made it at home!)
I can't say the attempt was a very successful one... I had to adjust it a lot in order to get the result I was after and even then it wasn't as sweet as I was hoping. So forgive me if I won't share the recipe here.

However after a little trial-and-error I managed to finally get the consistency I was after, and coated the coconut bars with a lot of delight. And having the chocolate quite bitter turned out to be a blessing as it balanced very nicely the ultra-sweet coconut filling.
I'm glad I had Christie and Catherine around to share some of this joy of RAW BOUNTY BARS with me... And the heart shaped ones will be a sweet surprise for my sweetheart tomorrow - providing he's not about to read my blogpost in the meantime ;)
